The SDU FOODLAB at SDU Biotechnology, Department of Green Technology at the University of Southern Denmark (SDU) invites applicants for a fully funded 36-month doctoral research position focused on sensory perception of plant-based foods and beverages with an expected starting date of March 1st, 2024, or as soon as possible thereafter.

The PhD project will contribute to several ongoing projects aimed to understand the fundamentals of the texture of plant-based food products at the microscopic level as well as explore the relationship between texture perception and consumer acceptance in plant-based products. 

The successful applicant will be primarily responsible for screening and recruiting human participants, establishing a vocabulary of texture and mouthfeel descriptors, and in conducting sensory and consumer tests of plant-based analogues (both meat and dairy). The candidate will further be responsible for the data analysis, and for establishing correlations between the sensory responses and the microstructural features of plant-based products (quantified through state-of-art microscopy), as well as rheological and texture properties.

The project holds high potential in identifying how desired textural attributes (e.g., juiciness) take their origin at the microstructural level, ultimately enabling the development of sustainable plant-based alternatives that meet consumer preferences.

The successful applicant will have the opportunity to work in a multidisciplinary team involving expertise in sensory evaluation, food microscopy, image analysis, among others, as well as to collaborate with leading industrial partners.

The ideal scientific profile of the candidate is:

  • A M.Sc. in Food Science, Food Technology, Human nutrition, Biotechnology, or related fields.
  • Experience with one or more of the following:
    • Sensory and consumer science
    • Food texture and rheology 
    • Plant-based meat and dairy analogs
    • Chemometrics/Multivariate data analysis

Furthermore, priority consideration will be given to candidates who possess the following qualifications:

  • Previous experience with practical planning of sensory experiments 
  • Previous experience with scientific publishing and other forms of research dissemination 
  • Danish language proficiency (as the project involves working with human subjects

Finally, the candidate is expected to:

  • Have an interdisciplinary and collaborative mind-set.
  • Be curious and interested in exploring new scientific horizons.
  • Work and communicate in an open and honest manner and engage in scientific discussions with colleagues.
  • Have the ability to work independently. 
  • Good English communication oral and written (work language is English). 
  • Contribute to teaching and assist in the supervision of students (master, bachelor).

Assessment process

Conditions of employment

Applicants are required to have a master’s degree (equivalent to a Danish master's degree) at the time of enrollment and employment. Employment as a PhD fellow is a 3-year salaried position. Read more about the basic scale of the collective agreement here

Employment is governed by the Protocol on PhD Research Fellows signed by the Danish Ministry of Finance and the Danish Confederation of Professional Associations. Please check link for more information on salary and taxation

Employment of a PhD fellow can only happen after the PhD School has approved the candidate for admission. Employment and enrollment will cease without further notice at the end of the period. A PhD fellow is not allowed to have any kind of sideline employment, while enrolled as PhD fellow at the faculty.

The application must be in English and must include the following (the required forms must be found at the Faculty website) for a PhD position:

  • Completed TEK PhD application form for 5+3 applicants. Find the form at the Faculty website.
  • Motivation letter stating your specific interest, motivation, and qualifications for the project in question (max. 2 pages).
  • Detailed Curriculum Vitae including personal contact information, research and teaching experience, list of publications (if any)
  • In case you have any publications, a maximum of 2 examples of relevant papers. Please attach one pdf-file for each publication.
  • Verified copies of the official bachelor diploma and master's diploma and transcripts of exams, both the original documents and in professional English translation.
  • Completed TEK PhD form for calculation grade point average. Find the form at the Faculty website
  • An official document describing the grading scheme of the awarding universities (if not Danish). 
  • An official and verified written assessment of the thesis or dissertation project from the grade giving institution, if the thesis/examination project is evaluated by approved/passed. The statement must clearly state that the candidate has been among the top 30% in the graduation class for the study programme.
  • References (names and emails) and/or reference letters may also be included. You're welcome to use the form for reference letter at the Faculty website.

All documents in connection with the application should not contain CPR number (civil registration number) – in that case, the CPR number must be crossed out.
